- A Levantine seasoning blend of wild thyme (za'atar), dried sumac, toasted sesame seeds and salt, with herbal aroma and a tangy, nutty taste.
- Typical dishes and uses
- Manakish (za'atar flatbread), topping for labneh and hummus, bread dipped in olive oil, roast chicken and vegetables. In this book: can be used to finish hummus.
- Substitutes
- 1 tbsp za'atar = 1 tsp dried thyme (or oregano) + 1 tsp sumac + 1 tsp toasted sesame seeds + a pinch of salt.
- Storage
- Airtight in a cool place for 6 months. The sesame turns rancid over time, so it keeps longer in the fridge.
