- A hot, tangy sauce of African bird's eye chilies with lemon, garlic, vinegar and oil. It developed in Mozambique and Portugal.
- Typical dishes and uses
- Peri-peri chicken, grilled prawns, with chips (French fries)
- Substitutes
- 2 tbsp peri-peri = 1 tbsp hot sauce + 1/2 tbsp lemon juice + 1/2 tbsp olive oil + a little minced garlic and paprika.
- Storage
- Unopened: 1-2 years at room temperature. Opened: 6 months in the fridge; homemade, 2 weeks in the fridge.
