Cook's tip
The poutine rule is hot fries, cold cheese and very hot sauce. If you can't find curds, tear mozzarella by hand. Take the fries out of the oven only just before saucing so they don't turn soggy.
Cooking it at camp
Bring the sauce from home and reheat it on the stove; instead of oven fries, cook potato wedges in an oiled covered pan. Cook the meats and eggs one after the other in the same pan.
