Ackee and Saltfish Cream Linguine
Jamaica meets Italy: saltfish and a touch of scotch bonnet in a garlicky cream sauce, tossed with linguine and topped with soft ackee.
Method
Rinse the saltfish, put it in a 18 cm pot with cold water, bring to the boil on high heat and boil for . Drain, boil again in fresh water for , then cool, remove skin and bones and break into small flakes. It should taste lightly salty.
Add in this stepSaltfish (boneless salt cod) 110 g
high heatBring 3 L of water to the boil on high heat and add the salt; use less than usual because the saltfish is salty. Cook the pasta for about , 1 minute less than the packet says. Before draining, scoop out a mug of the cooking water.

Add the chopped shallot, sliced garlic, thin strips of bell pepper, the very finely chopped scotch bonnet (seeds removed, gloves on) and the thyme, and cook for until soft and fragrant. Garlic that turns brown tastes bitter.

Cook's tip
Add the ackee last and barely stir, so it stays in pretty golden pieces. If scotch bonnet feels too fierce, use a little fresh red chilli or chilli flakes. Swap the cream for coconut milk for a more Caribbean flavour.
Cooking it at camp
Desalt and flake the saltfish at home and bring it chilled. Two burners (one for pasta, one for sauce) make it easy; with only one, cook the pasta first, toss it with a little olive oil, then make the sauce. Keep the cream in the cooler.
