Cook's tip

No khmeli suneli? Mix ground coriander, dried marjoram and smoked paprika 2:1:1 for a similar flavour. The vegetables and bulgur keep for 3 days in the fridge, so it makes a great packed lunch. Add the chickpeas just before eating so they stay crisp.

Cooking it at camp

Wrap the vegetables in foil and cook them over the coals for 15–20 minutes; fry the chickpeas in a little oil in a pan until crisp. Bulgur only needs boiling water, which makes it ideal for camping. Keep the herbed yogurt in the cooler below 5 °C.
