Cook's tip
Keep the apple dice tiny or the balls will split and won't turn neatly. Filled æbleskiver need longer, so cook one notch lower than plain ones. Seeds from whole cardamom pods crushed in a mortar give a far stronger aroma than ready-ground.
Cooking it at camp
Make the apple filling and brown butter at home and pack them cooled. Prepare the batter up to the point before adding the whites and keep it in the cooler, then just whisk the whites at camp. Keep the stove flame low and always use a windshield.
