Slow-Simmered Ají de Gallina with Toasted Pecans
Restaurant-style ají de gallina: a rich bone-in chicken stock, a slow 15-minute aderezo and toasted pecans, with crisp roast potatoes and jammy eggs.
Method
Put the water, chicken thighs, stock onion, carrot, celery, bay leaves and salt in a 20 cm pot and bring to the boil over high heat. Skim off the foam carefully, then turn down to medium-low heat, half-cover and simmer gently for . Keep it at a lazy bubble rather than a rolling boil for a clear, full-flavoured stock. The chicken is done when the meat comes away from the bone easily.

Cook's tip
Bone-in thighs stay juicier than breast and give a far deeper stock. Freeze the leftover stock for next time. Ají amarillo paste varies in heat from jar to jar, so start with less and add more after tasting.
Cooking it at camp
Make the stock and shred the chicken at home and pack them separately in the cooler. At camp, wrap the potatoes in foil and bury them at the edge of the embers for 30 to 40 minutes. Cook the aderezo slowly over low heat in a Dutch oven or heavy pan.
