Aloo Keema
Pakistan's everyday mince and potato curry: beef mince and soft potato cubes cooked down in onion, tomato and warm spices, eaten with roti or rice.
Method
Finely chop the onion and grate or finely chop the ginger and garlic. Chop the tomato small. Peel the potatoes, cut them into 3 cm cubes and keep them in cold water so they don't brown. Slice the green chillies and chop the coriander.

Cook's tip
The two keys are properly browned onions and frying the tomato masala until the oil separates. Leave a little sauce for rice, or cook it drier for roti. Add a handful of frozen peas for the last 5 minutes to make aloo matar keema.
Cooking it at camp
It works in one heavy pot or cast-iron pan on a camping burner. Chop the onion, ginger and garlic at home and pre-mix the spices in a small bag to save time. Keep the mince in a cooler below 5 °C and cook it on the first day.
