Cook's tip
No ají amarillo? Stir a little sriracha into the mayonnaise and add plenty of lime. Never crowd the beef: too much at once releases water and it stews instead of searing. Frozen oven fries work in place of homemade wedges.
Cooking it at camp
At the campsite, wrap whole potatoes in foil and cook them at the edge of the coals for 30 to 40 minutes, then split and crush them. Marinate the beef at home, keep it in a cooler below 5 °C and sear it in a cast-iron pan set on the grill.
