  1. Melt the butter in a 20 cm frying pan over medium heat, add the apples, brown sugar, most of the cinnamon and the salt and cook for , stirring, until the apples are tender but still in cubes. Mix the lemon juice with the cornstarch, stir it in and let it bubble for a few seconds until the juices turn thick and glossy. Brush the border with water, fold the disc over and press out the air. Seal the edge by folding and twisting it over itself in small pleats (the Argentine repulgue), or simply press it with a fork.

Add in this stepDulce de leche (thick) 18 g

Cook's tip

Empanada discs for baking are sold frozen in Latin shops and many large supermarkets; puff pastry or pie dough cut into 13 cm circles works too. Don't overfill, or the empanadas burst open in the oven. Unbaked, they freeze well: bake them from frozen, adding 5 minutes.

Cooking it at camp

Fill and seal the empanadas at home and carry them flat in the cooler. At camp, bake them in a lined Dutch oven with about 8 coals below and 14 on the lid for about the same time, or cook them in a covered, lightly buttered pan over low heat for 5–6 minutes per side until golden. Hand pies need no plates or cutlery.
