Al Pastor Chaufa with Charred Pineapple (Peruvian-Chinese × Mexican)
Achiote and ancho-marinated pork and charred pineapple tossed through Peruvian chaufa, finished with lime and coriander.
Method
Cut the pork into thin strips, 5 mm thick and 1 cm wide. Finely chop half the garlic and mix it with the achiote, ancho, cumin, oregano, vinegar and half the salt into a paste; rub it all over the pork and leave for 15 minutes. Achiote stains hands and boards red, so gloves help. Meanwhile cut the pineapple into 1.5 cm pieces, roughly chop the onion, seed and finely chop the jalapeño and chop the rest of the garlic. Break up the rice with your fingers.

Cook's tip
If you use tinned pineapple, dry it very well or it will stew instead of charring. No ancho? Use sweet paprika with a pinch of chilli flakes. For more heat, leave the jalapeño seeds in.
Cooking it at camp
Marinate the pork at home and carry it in a zip bag in the cooler; it picks up more flavour on the way. You can grill pineapple slices whole over the fire and chop them in. Camp burners are weaker, so fry one or two portions at a time.
