Bak Chor Mee Mazesoba (Singaporean × Japanese)
Brothless ramen with a black-vinegar base, sambal pork, garlic chives, nori, bonito flakes and a raw yolk, mixed at the table.
Method
Finely chop the garlic chives and spring onions and snip the nori into thin strips with scissors. Separate the eggs and keep each yolk in half a shell. Mazesoba comes together in seconds, so have every topping ready first.
Heat the oil in a 20 cm pan on medium-high heat, add the pork and press it flat with a spatula, breaking it up. When the fat runs and it has crisp brown patches, add the garlic, ginger and sambal and fry for 1 minute, then add the soy, mirin and sugar and stir until no liquid remains. About in total.

Add in this stepEgg yolks (very fresh) 2Garlic chives 30 gSpring onions 1Nori sheets 1Bonito flakes 2 g
Cook's tip
The Japanese finish is a spoonful of rice stirred into the leftover sauce. Control the heat with the sambal, and if raw garlic chives are too sharp for you, blanch them for 5 seconds.
Cooking it at camp
Cook the pork topping at home, chill it and just reheat it in a pan. Crack a fresh egg straight from the cooler for the yolk, or use a soft-boiled egg if you are unsure.
