Cook's tip
Use well-fermented, sour kimchi: it has the most flavour and less water. Squeeze it so the crêpes stay crisp. If your kimchi is very salty, leave the salt out of the batter.
Cooking it at camp
Stir-fry the kimchi pork at home and chill it; carry the batter and sauce in bottles in a cooler. On a camp stove, warm the filling in the skillet, then make the crêpes one at a time and eat them hot, wrapped in perilla leaves.
