Cook's tip

No uncut sheets? Overlap wide fresh rice noodles side by side into a rectangle and roll them the same way. Sriracha or chilli oil on the side adds heat. The sheets firm up as they cool, so eat the rolls straight away.

Cooking it at camp

Cook the filling at home, cool it and carry it in a sealed box in a cooler below 5 °C. At camp, soften the sheets with a splash of boiling water, roll and crisp them in a cast-iron pan. Make the glaze ahead and bring it in a small jar.
