Cinnamon Sugar Croffles with Vanilla Ice Cream
The café favourite: rolled puff pastry pressed in a waffle iron until the outside caramelises into a crackly shell and the inside stays flaky and buttery.
Method
Mix the brown sugar and cinnamon evenly on a wide plate.

Take the puff pastry, thawed in the fridge, out while still cold. Cut it into strips 3 cm wide and about 25 cm long (about 50 g each) and roll each one loosely from one end into a snail-shaped roll; make 4 rolls. Work quickly: warm pastry loses its layers as the butter melts.

Brush the rolls with melted butter and roll them in the cinnamon sugar until coated on every side. Chill them, on the plate, for . Meanwhile preheat the waffle iron to a medium setting.

Place one roll in the centre of each grid, close the lid and press down gently so it flattens. Bake for per batch, until the sugar has melted into a deep amber caramel and the steam has almost stopped. Total batches: 2. Melted sugar is extremely hot, so lift them out with a fork or tongs, never your fingers.
Cool on a rack for 1 to 2 minutes so the caramel sets and turns crisp. Put the croffles on plates, top each serving with a scoop of vanilla ice cream, drizzle with maple syrup, sprinkle with the flaky salt and serve at once.

Cook's tip
Thawed frozen unbaked croissants can be pressed straight in the iron too. Caramelised sugar wipes off easily with a damp cloth once the iron is switched off and just warm. Whipped cream and strawberries are a good swap for the ice cream.
Cooking it at camp
Roll the pastry and coat it in cinnamon sugar at home, then pack the rolls in a sealed tub in the cooler. Preheat a stovetop cast-iron waffle iron over low to medium heat and bake, turning it from side to side. Ice cream melts fast, so keep it at the very bottom of the cooler or use whipped cream instead.
