Cook's tip

Grating frozen butter keeps it from melting in your hands, which gives much clearer layers. If the dough gets sticky while folding, dust it lightly with flour; if the butter starts to soften, chill it for 10 minutes before carrying on. The sausage tastes even better mixed a day ahead.

Cooking it at camp

Mix the sausage and laminate the biscuit dough at home and pack both in a cooler; at camp, bake the biscuits in a lidded Dutch oven with coals underneath and on top. Doing the folding in a cool kitchen is what keeps the layers.
