Cook's tip

The ice water is what makes the dip fluffy, so make sure it is properly cold. The dip keeps for 3 days in the fridge; just make fresh butter to pour over before serving. Cucumber and carrot sticks are great for dipping too.

Cooking it at camp

Make the dip at home and pack it in a sealed container in the cooler. At camp, toast the pita on the grill or in a pan, melt the butter in a camping mug, stir in the spices and pour it over for an easy, impressive snack.
