Cook's tip

Duck breast instead of chicken thigh brings it closer to real Peking duck. Thin very thick hoisin with 1 tsp water. If the blini tear when rolling, use a slightly larger ladle of batter.

Cooking it at camp

Marinate the chicken at home and carry it in a zip bag in the cooler; sear it skin side first in a pan on the stove or on a grill. Cook the blini at home and wrap them in film, so at camp they only need warming in the pan.
