  3. Turn down to medium-low heat, sprinkle in the curry powder and turmeric and stir for , until the spices smell fragrant. Keep stirring so they do not scorch and turn bitter.

  6. Spread the mince in a 20×15 cm ovenproof dish and press it flat with the back of a spoon. Whisk the eggs into the reserved milk and pour it over slowly so it sits on top as a layer. Push the bay leaves upright into the custard and bake in the oven for , until the custard is set, golden in patches and no longer wobbles in the middle.

Add in this stepEggs 1Bay leaves 2

    oven
  7. Let it stand for so the custard firms up and cuts cleanly. Serve with yellow rice or plain rice and extra chutney, and if you like, sliced banana and desiccated coconut. Remove the bay leaves before eating.

Cook's tip

If the custard sinks into the meat, the mince was too wet; simmer it a little longer next time. No chutney? Use 1 tbsp apricot jam instead. Bobotie tastes even better reheated the next day.

Cooking it at camp

Fry the mince in a pan on the burner, then pack it into a greased cast-iron pot, pour on the custard, put the lid on and set it on a few coals with more coals on the lid for about 30 minutes. Without coals, cover the pan and cook on low heat until the custard sets; it will not brown, but it tastes the same.
