Pink Borscht Risotto
A café-style twist on borscht: creamy risotto turned vivid pink with grated raw beetroot, topped with sour cream, dill and crispy bacon.
Method
Pour the stock into a small pan and heat on high heat for until steaming, then turn down to low heat and keep it hot; cold stock stops the rice cooking evenly. Meanwhile, peel and finely grate the beetroot (wear gloves), finely chop the onion and garlic and shred the cabbage into 3 mm strips.

Cook's tip
Risotto sets quickly as it cools, so warm the plates and eat straight away. Leave out the bacon, add a little extra butter and use vegetable stock for a vegetarian version. Shape leftovers into balls, coat in breadcrumbs and pan-fry for pink arancini.
Cooking it at camp
One wide pan and a burner are all you need. Bring the stock hot in a vacuum flask to skip the heating step, and grate the beetroot at home into a sealed tub. Wind weakens the flame, so set up a windshield and allow a few extra minutes.
