Budae Fried Rice Cheese Gratin

Luncheon meat and sausage fried rice in army-stew seasoning, topped with eggs, mozzarella and crunchy crushed instant noodles, then baked until bubbling.

Method

  1. Preheat the oven to 220 °C. Mix the gochujang, ketchup, chilli flakes, soy sauce and sugar in a small bowl for the seasoning.

  2. Dice the luncheon meat and sausages into 1 cm pieces, squeeze and finely chop the kimchi, and finely chop the onion. Heat the oil in a 24 cm frying pan and fry the luncheon meat and sausages over medium-high heat for until golden.

  3. Add the onion, kimchi, baked beans and seasoning and stir-fry over medium heat for , until the seasoning blends into the oil and the kimchi softens.

  4. Add the rice and stir-fry over medium-high heat for , pressing it with the spatula so every grain gets coated. When the pan starts to crackle, it's ready.

  5. Spread the fried rice evenly in a 20 cm ovenproof dish. Make one small hollow per serving with a spoon and crack an egg into each. Cover around the eggs with mozzarella and scatter over the instant noodles, crushed by hand.

  6. Bake on the middle shelf of the preheated oven for . When the cheese is bubbling with brown spots and the egg whites have turned opaque, take it out and scatter over the spring onion.

Cook's tip

Freshly cooked rice turns mushy, so use cold or cooled rice. For fully set yolks, bake 3 to 4 minutes longer. Crumbled roasted seaweed or breadcrumbs also give a crunchy top instead of the noodles.

Cooking it at camp

No oven? Spread the fried rice in a cast-iron pan, top with the eggs and cheese, cover with a lid and leave over low heat for 8 to 10 minutes. If you have a torch, scorch the cheese at the end.
