Bún Chả Burger with Pickled Carrot and Sriracha Mayo
Vietnam meets America: a Hanoi-style pork patty lacquered with fish-sauce honey glaze, topped with pickled carrot and cucumber, sriracha mayo, mint and coriander.
Method
Cut the carrot into fine matchsticks and the cucumber into thin diagonal slices and put them in a bowl. Toss with the rice vinegar, half the sugar and the salt and leave for . This brings the sweet-sour taste of the bún chả dipping sauce into a pickle.

Finely chop the shallots and garlic and put them in a bowl with the pork, fish sauce, the rest of the sugar and the pepper. Knead for 1 minute until sticky. Divide into 2 and shape into rounds 1.5 cm thick and 1 cm wider than the buns, then press a shallow dimple in the middle with your thumb so they don't dome as they cook.

Mix the honey, glaze fish sauce and lime juice to make the glaze. In another bowl, mix the mayonnaise and sriracha.

Heat the oil in a 24 cm pan on medium-high heat and cook the patties for per side. Turn the heat down to medium heat, brush both sides with the glaze and cook for about more, turning, until sticky and shiny. Honey burns fast, so do turn the heat down. They are done when the centre feels springy and shows no pink when cut (71 °C inside).

Cook's tip
Very lean mince makes dry patties, so avoid it. Wet your hands when shaping and the meat won't stick. Leftover pickles keep for 3 to 4 days in the fridge.
Cooking it at camp
Shape the patties at home, stack them between sheets of baking paper and pack them in the cooler. Grilling over charcoal brings back the smoky flavour of real bún chả. Move the patties to the cooler edge of the grill before glazing.
