Burmese Curry Chicken Egg Palata Rolls with Lime-Onion Slaw
Inspired by the egg palata of Burmese tea shops: crisp egg-fried tortillas rolled around turmeric curry chicken and a tangy lime and onion slaw.
Method
Make the slaw: slice the red onion paper-thin and shred the cabbage finely. Toss with the lime juice, salt and half the coriander and leave for ; the onion loses its harsh bite and the cabbage softens slightly.

Keep tossing so the spices don't burn; it is ready when it is almost dry, the spices smell toasty and the thickest strip shows no pink when cut. Tip onto a plate.

Add in this stepChopped coriander leaves 1 tbsp
Cook's tip
Frozen paratha (roti) cooked in place of the tortilla is closer to a real Burmese palata. Leftover Burmese chicken curry, shredded and cooked down until dry, makes a great filling. Wrap in foil or baking paper to eat on the go.
Cooking it at camp
A great camping dish: prepare the slaw and the spiced chicken at home and keep them in the cooler, then at the campsite fry the chicken and cook the egg tortillas in the same single pan.
