Butter Chicken (Murgh Makhani)
A North Indian dish of spice-marinated chicken, roasted and then simmered in a smooth tomato, butter and cream sauce.
Method
Cut the chicken into bite-size pieces, toss with the marinade ingredients and refrigerate for at least 1 hour (overnight if possible).

Cook's tip
Fenugreek leaves give the signature aroma, but you can leave them out. For a deeper red colour, mix in some paprika.
Cooking it at camp
Marinate the chicken at home in a zip-lock bag so it marinates while you travel. Grill it, then combine it with the sauce in a Dutch oven.
