Bombay Potato Breakfast Hash with Masala Eggs (Indian × American)
Turmeric-crisped potatoes tossed in a mustard-seed and cumin tadka with tomato masala, eggs baked on top and finished with yogurt, lime and coriander.
Method
Cook only on a camp stove or over a fire in a fire ring, with water nearby. Cut the unpeeled potatoes into 1.5 cm cubes and the onion into 1 cm pieces. Finely slice the green chili (seed it if you want less heat), grate the ginger, mince the garlic and finely chop the tomato. Chop the coriander, stems and all.
Heat part of the oil in a 24 cm cast-iron skillet over medium heat, add the potatoes with half the turmeric and half the salt and stir to coat. Cover and cook for , stirring every 4 to 5 minutes, until a knife slides in easily, then uncover and cook more until golden. Tip them onto a plate.

Cook's tip
The oil must be hot enough for the mustard seeds to pop and turn nutty. If they don't pop, wait a little longer; if they smoke and turn black, lower the heat, as burnt seeds taste bitter. Pack the spices from home in two small tubs: one with the seeds, one with the ground spices.
Cooking it at camp
At home, make it in a large lidded frying pan on the stove with the same heat settings and times. Microwaving the cubed potatoes for 4 to 6 minutes first halves the time in step 2.
