Cook's tip
Frozen seafood mix works: thaw it overnight in the fridge, pat dry and add only for the last 2–3 minutes. No fish stock? Use water plus a little more fish sauce. Seafood toughens if it boils too long.
Cooking it at camp
A one-pot stew that suits camp cooking. Make the base (up to step 3) at home, carry it chilled, then reheat and cook only the seafood on site. Toast the bread on the grill. Keep the seafood well iced in the cooler.
