Cook's tip
No waffle iron? Cook the same batter as thick pancakes in a frying pan. Shredded leftover carbonnade flamande in place of the ragù makes it even more authentic. The pickled onion keeps for a week in the fridge.
Cooking it at camp
Make the ragù and pickle at home and bring them in a cooler below 5 °C; cook the waffles in a stovetop waffle iron or as pancakes in a pan. Pre-mix the dry batter ingredients at home so you only add eggs and milk on site.
