About servingsBrown butter is extremely hot: pour it slowly into the bowl so it doesn't splash, and hold the pan handle with a dry cloth.

Method

  1. Preheat the oven to 170°C (fan ovens 20 °C lower) for . While it heats, spread the walnuts on a baking tray and toast them for until fragrant, then cool and chop roughly. They burn quickly, so set a timer.

  2. Make the brown butter. Melt the butter in a small light-coloured pan over medium heat for , swirling. Once the foam settles and the milk solids at the bottom turn hazelnut brown and smell nutty, immediately pour it, brown specks and all, into a heatproof bowl. Leave for until just warm. It can burn in seconds, so don't walk away.

  8. Spread a third of the frosting over the bottom layer and place the top layer on it, cut side down. Cover the top and sides with a thin coat of frosting to trap the crumbs and chill for , then spread on the rest smoothly. Finish with the remaining walnuts and a little flaky salt.

Cook's tip

Brown butter loses about 15% of its weight as the water evaporates; that is normal. The thin first coat (crumb coat) gives a clean, crumb-free finish. Chilled overnight, the spice and brown-butter flavours come together even better.

Cooking it at camp

Finish the layer cake at home, box it and carry it on top in the cooler where it won't be squashed. With cream cheese frosting it must stay cold; eat it the same day.
