Cook's tip
Leftover roast chicken or grilled sausage works instead of duck confit. Make the beans the day before and reheat them, and brunch takes 10 minutes. A runny fried egg on top makes it even better.
Cooking it at camp
At a campsite, bring the beans made at home in a tub; crisp the duck and warm the beans in one pan and toast the bread on the grill grate. Keep the duck confit and beans in the cooler.
