Cook's tip
Thighs stay juicier than breast, but either works. Don't overfill: a thin layer melts right through and stays sealed. Leftover chapatis from the day before work perfectly; just start at step 2.
Cooking it at camp
Make the dough at home or bring ready-cooked chapatis, and keep the chicken and cheese well chilled in the cooler. At camp, everything cooks in one heavy pan on a gas burner; make the salsa first while the pan heats.
