Chatamari
Kathmandu's Newari 'rice-flour pizza': a thin, crisp-edged rice crepe topped with spiced mince, egg, onion and tomato, cooked under a lid.
Method
Put the rice flour and salt in a bowl and whisk in the water a little at a time until you have a smooth, thin batter with no lumps, slightly thicker than milk. Leave it to rest for so the flour absorbs the water; the crepes will hold together better.
Add in this stepRice flour (not glutinous) 120 gWater 200 mlSalt (for the batter) ¼ tsp
Heat a little of the oil in a 20 cm frying pan over medium-high heat, add the finely chopped garlic and ginger and stir for 30 seconds, then add the mince, cumin, turmeric, chilli powder and salt. Cook for , breaking the meat into small crumbs with your spoon, until no pink remains and it starts to brown. Tip into a bowl.
Add in this stepVegetable oil 1¼ tspGarlic cloves 2Fresh ginger 8 gMinced beef (or minced chicken) 160 gGround cumin ½ tspGround turmeric ¼ tspChilli powder ½ tspSalt (for the meat) ½ tsp
medium-high heatFinely chop the onion, deseed and finely dice the tomato, and finely chop the chillies and coriander. Beat the eggs in a small bowl.
Put a 20 cm non-stick frying pan over medium heat for to heat up, then brush it with a thin film of the remaining oil. Brush with a little oil before each crepe.
Add in this stepVegetable oil 1¾ tsp
medium heatStir the batter (the flour settles), pour a ladleful (about 80 ml) into the centre of the pan and quickly tilt the pan so it spreads into a thin round. Cook for , until the edges look set and the surface turns matte with tiny holes. Spoon a little beaten egg over and spread it with the back of the spoon, then scatter over some of the meat, onion, tomato and chilli. Turn down to medium-low heat, cover with a lid and cook for , until the egg is completely set and the underside is golden and crisp. Repeat with the rest; you will make 4 in total.

medium-low heatSlide each chatamari onto a board, sprinkle with coriander and cut into 4 wedges like a pizza. Eat hot, with tomato achar or chilli sauce on the side.
Add in this stepFresh coriander 6 g
Cook's tip
If the crepe comes out thick and gummy, the batter is too thick: whisk in a tablespoon of water. If it tears as you spread it, let the batter rest a little longer or heat the pan more. Never flip a chatamari: the lid steams the topping while the base crisps.
Cooking it at camp
Works well on a camping stove with a lidded frying pan: mix the rice flour and salt at home in a bottle and just add water and shake at the site, and cook the mince at home and keep it in a well-iced cooler. No lid? Cover with a plate or foil.
