Cook's tip
Thigh meat stays juicy even after a long braise. Do steps 2 and 3 a day ahead and tacos are on the table in 10 minutes on a busy night. Flour tortillas work if you can't find corn.
Cooking it at camp
Do steps 2 and 3 at home and carry the chicken in a zip-lock bag in the cool box, with the pickle in a jar. At camp, crisp the chicken in a cast-iron pan and warm the tortillas straight on the grill.
