Chicken Cacciatore Japanese Curry Rice (Italian × Japanese)
Cacciatore's red wine, tomato, rosemary and olives meet a homemade Japanese curry roux in a thick, gently sweet curry served over steamed rice.
Method
Make the roux: melt the butter in a small pan, add the flour and cook over medium-low heat, stirring constantly, for until light brown and nutty-smelling. Turn off the heat, stir in the curry powder for 30 seconds and set aside. Curry powder burns easily over direct heat.

Cook's tip
Once the roux is in, the curry catches easily, so keep the heat low and stir often. For extra depth, a square of dark chocolate or a little grated apple gives that classic Japanese-curry sweetness. It is even better the next day.
Cooking it at camp
Make the roux at home and bring it in a small tub; at the campsite everything then happens in one pot. Cook rice in a camping pot or heat instant rice. Keep the chicken in the cooler below 5 °C and cook it on the first day.
