Mini Chicken Kyiv Balls with Garlic-Dill Dip
Bite-size chicken balls hiding a frozen herb-butter centre, fried until crisp: they burst with butter as you bite, with a dill sour cream dip.
Method
Finely chop the dill and set aside about three-fifths of it; grate half the garlic and mix both into the soft butter. Spread it into a 1 cm thick square on baking paper and freeze for until hard, then cut it into 10 small cubes. Put the cubes straight back in the freezer.

Cook's tip
If the mixture sticks to your hands, wet them or chill the mixture for 10 minutes. Keep the butter cubes in the freezer until the moment you use them; softening butter leaks through the seams. You can freeze the crumbed balls and fry them straight from frozen, adding about 2 minutes.
Cooking it at camp
Freeze the crumbed balls and carry them in the cooler. At camp, shallow-fry them in a heavy pan with 1 cm of oil over medium-low heat, rolling them around, then cover for 2 to 3 minutes and check that they are cooked through. Mix the dip at home and bring it chilled.
