Chicken Parma Sliders with Garlic Butter
Pull-apart party sliders: crisp mini chicken schnitzels, napoli sauce and mozzarella in soft rolls, brushed with garlic butter and baked in one tray.
Method
Put the crushed tomatoes, half the chopped garlic, the oregano and the salt in a small 14 cm saucepan over medium heat. When it bubbles, turn down to low heat and simmer for until thick enough to sit on a spoon without running, so the buns don't go soggy. Heat the oven to 200 °C.

medium heat→low heatCut the chicken into two thin pieces per serving and pound them between cling film to 1 cm. Make them slightly larger than the buns, as they shrink a little when cooked. Season with salt, then coat in flour, beaten egg and panko, pressing the crumbs on firmly.

Pour oil 1 cm deep into a 26 cm frying pan and heat over medium-high heat to 170 °C (a panko crumb should sizzle at once). Lay the chicken in away from you and fry for per side until golden, then drain on a rack. If the size shows ×2, fry in two batches, and never leave hot oil unattended.

medium-high heatMelt the butter with the remaining garlic in a small pan over low heat for , just until it smells of garlic, then stir in the parsley. Take it off as soon as it sizzles; browned garlic turns bitter.

Top each with a chicken piece, a spoonful of sauce and the mozzarella, then put the tops back on. Brush generously with garlic butter, sprinkle with parmesan and bake in the oven for , until the cheese is melting down the sides and the tops are golden.

Cook's tip
Rolls baked joined together give the best pull-apart effect. You can fry the chicken ahead and chill it; then add 3–4 minutes to the baking time so it heats right through.
Cooking it at camp
Fry the chicken at home, cool it and pack it in the cooler with the sauce and garlic butter. At camp, assemble the sliders in a foil tray, cover with foil and heat on the grill for about 10 minutes until the cheese melts.
