Cook's tip

Toss the chips with the sauce right before assembling so you get both crunch and juiciness. If tomatillos are hard to find, the red salsa from Chilaquiles Rojos works just as well.

Cooking it at camp

Make the salsa verde at home and carry it in a jar in the cooler. At camp, one cast-iron pan does it all: toast the bread, warm the beans, fry the eggs, then warm the salsa and toss the chips. Toasting the rolls over a grill adds a lovely smoky note.
