Chili crab spaghetti
Singapore meets Italy: the sweet-spicy chili crab sauce emulsified with butter and pasta water, tossed with spaghetti and finished with crab meat and egg ribbons.
Method
Bring 3 L water to the boil in a large pot over high heat (about ). Add the salt and spaghetti and cook 1 minute less than the packet says, about . Scoop out a cup of pasta water before draining.

high heatWhile the pasta cooks, melt the butter in a 26 cm pan and gently fry the minced garlic, shallots and sliced chili over medium-low heat for , until soft and fragrant; don't let the garlic brown.

medium-low heatAdd the ketchup, sweet chili sauce, sambal and 3 tbsp pasta water and simmer over medium heat for , until slightly reduced.

medium heatAdd the drained spaghetti and toss over medium heat for , adding pasta water a little at a time until the sauce clings to the pasta glossily.
medium heatAdd the crab meat and fold gently over medium heat for to warm it through. Turn the heat to low heat, pour in the beaten egg and toss with big movements for about 30 seconds, until the egg sets into soft ribbons and the sauce turns creamy.

Cook's tip
The crab meat is already cooked, so long cooking makes it stringy. Using raw crab? Steam it for 10 to 12 minutes first and pick the meat. If the sauce is too thick, add pasta water; too thin, reduce it a little longer.
Cooking it at camp
Two burners make it easy; with one, cook and drain the pasta first, then make the sauce in the same pot and toss. Keep the crab meat cold in the cooler.
