Cook's tip
Sour, well-aged kimchi works best with the butter. The gochujang chimichurri rounds out after a day and keeps for 3 days in the fridge. A slice of cheese melted over the kimchi is a delicious extra.
Cooking it at camp
Make the chimichurri and buttered kimchi at home and pack them in airtight tubs; keep the chorizo in a cooler below 5 °C. Grill the sausages slowly at the edge of the charcoal and warm the kimchi in a cast-iron pan.
