Cook's tip
Brown butter goes from perfect to burnt in seconds, so pull it off as soon as it is light brown; a pale-bottomed pan lets you see the colour. You can hold poached eggs in a bowl of warm water and plate them all together.
Cooking it at camp
Toast the bread on a camp grill instead of a griddle, and make the eggs and butter one after the other in a single pot. Wind makes the water temperature wander, so set up a windscreen; whip the yogurt at home and pack it in the cooler.
