Coq au Vin Pot Pie
Red-wine chicken, bacon and mushroom filling in individual dishes under a puffed, golden puff-pastry lid: coq au vin turned café brunch star.
Method
Cut the chicken into 3 cm pieces, season with the salt and pepper and toss in the flour until coated; the flour will thicken the sauce later. Cut the bacon into 1 cm strips, quarter the mushrooms, roughly chop the shallots and finely chop the garlic.

Cook's tip
The filling tastes even better made the day before and chilled, and then you only need to top and bake. Keep the pastry cold so it puffs well; if it goes floppy, chill it for 10 minutes before topping.
Cooking it at camp
Make and cool the filling at home. At camp, put it in a Dutch oven, cover with the pastry and bake for 20 to 25 minutes with more coals on the lid than underneath. With no oven, bake the pastry separately in a covered pan and lay it on top of the reheated filling.
