Croque Monsieur
The Paris café classic: ham and cheese between buttered bread, blanketed in béchamel and more cheese, then baked until golden and bubbling.
Method
Preheat the oven to 200°C for and line a baking tray with baking paper. Take the butter out so it softens.
ovenMake the béchamel. Melt the béchamel butter in a 14 cm saucepan over medium-low heat, add the flour and whisk for ; it should foam without colouring. Pour in the cold milk in three goes, whisking until smooth each time, then raise to medium heat and keep whisking for as it bubbles. When it is thick enough that a finger drawn through the sauce on the back of a spoon leaves a clear line, take it off the heat and season with the nutmeg, salt and pepper.

medium-low heat→medium heatSpread one side of each slice of bread thinly with soft butter. Lay half the slices buttered side down on the tray and spread each with 1 tsp of béchamel. Fold the ham to fit the bread, add about a third of the cheese and cover with the remaining slices, buttered side up.

Spread the rest of the béchamel thickly over the tops, right to the edges, and scatter over the remaining cheese.

Bake on the middle shelf of the oven at 200°C for , until the bottoms are golden and the sauce bubbles. Then switch the oven to the grill (broiler) setting and cook for another , until the cheese has brown spots. Stay close; it can burn in seconds.

Cook's tip
Pouring in cold milk helps prevent lumps; if a few appear, whisk hard. Top it with a fried egg and it becomes a croque madame.
Cooking it at camp
Use a lidded frying pan instead of the oven: cook the sandwiches buttered side down on low heat, covered, for 3 to 4 minutes per side so the cheese melts. Make the béchamel at home, or skip it and add a little more cheese inside.
