Cook's tip

Corn tortillas must be warmed or they crack; doubling them up makes sturdy tacos for generous fillings. Minced lamb skips the slicing and is even quicker, and sour cream can stand in for the yogurt.

Cooking it at camp

Perfect for camping. Make the pickled onion and crema at home and bring them in jars in the cooler, along with the sliced, marinated lamb. Warm the tortillas straight on the grill grate and cook the lamb in a cast-iron pan or on a griddle.
