Cook's tip

Coating the chicken in starch and oil and baking it hot gives a crisp crust without deep-frying. Use soft rice cakes; hard ones split when you skewer them. In an air fryer, cook the chicken at 200 °C for about 15 minutes.

Cooking it at camp

Season the chicken at home and carry it in the cooler. At the campsite, skewer it and grill over the cooler side of the charcoal, turning often until cooked through, then brush with glaze. The glaze burns easily, so add it only in the last 2–3 minutes.
