Cook's tip

Freshly cooked rice is too soft to bind, so use cold or day-old rice. If the mixture is sticky, add rice flour a tablespoon at a time. Leftover dal bhat works perfectly. Shaped cakes freeze well; fry from frozen on slightly lower heat for a little longer.

Cooking it at camp

Shape the cakes at home and carry them chilled in a sealed box; at camp just fry them in a cast-iron pan. Char the achar tomatoes on the campfire grill for extra smokiness.
