Beef Brisket Doenjang Jjigae with Rice-Water Stock
Restaurant-style doenjang stew: toasted anchovy and kelp stock made with rice water, paste fried in rendered beef brisket fat, served bubbling in an earthenware pot.
Method
Put the cleaned anchovies in a dry 18 cm pot and toast over medium-low heat for , until the fishy moisture is gone and they smell nutty.

high heat→medium-low heatWhile the stock steeps, cut the zucchini into 1 cm quarter-moons and the onion into 2 cm pieces. Stem the shiitake and slice 5 mm thick, and cut the tofu into 2 cm cubes. Slice both chilies on the diagonal and the green onion thinly. Cut the brisket into 5 cm lengths.
Heat a 18 cm earthenware pot (or heavy pot), add the brisket and fry over medium-high heat for , until the fat renders and the edges brown. If there is a lot of fat, pour off all but 1 tbsp. Turn down to medium-low heat, add the garlic, doenjang and gochujang and fry for to bring out a toasty aroma.

Cook's tip
Frying the paste in fat first removes its raw, chalky edge and deepens the flavour, but keep the heat low and brief: scorched doenjang turns bitter. For 3 or 4 servings, use two earthenware pots, or cook in a large pot and transfer to the earthenware pot for a final boil.
Cooking it at camp
Make the stock at home and bring it in a bottle. Pack the brisket frozen in the cooler and it will be thawed just right on arrival. A cast-iron or thick camp pot scorches the paste less and stays hot like earthenware.
