Cook's tip
Rushing the onions over high heat burns the outside and makes them bitter, so give them time over medium. A little kasuri methi gives that restaurant taste, but too much is bitter. Too thick? Add hot water. Too thin? Simmer uncovered a little longer.
Cooking it at camp
A blender is impractical at camp, so make the gravy at home (up to step 5), pack it in a sealed tub in the cooler and use it within 2 days. At the site, just warm it through and add the fried boiled eggs.
