Egusi Chicken Korma (Nigerian x North Indian)
Toasted egusi stands in for the cashew paste of a North Indian korma: yogurt-marinated chicken in a creamy, nutty, gently spiced sauce with spinach.
Method
Cut the chicken into 3 cm pieces and mix with the yogurt, turmeric and half the salt. Leave to marinate for (up to 30 minutes at room temperature, or covered in the fridge for longer). The yogurt keeps the chicken juicy.

Toast the egusi in a dry frying pan over medium-low heat for , stirring constantly, until it smells nutty and turns faintly golden; it burns quickly, so don't walk away. Tip it into a bowl and stir in a little of the stock to make a smooth, thick paste.

medium-low heatMelt the ghee in a 20 cm pot over medium heat. Add the thinly sliced onion and fry for , stirring, until soft and golden brown. Add the grated garlic and ginger, the finely chopped chilli, the tomato paste and half the garam masala and stir for , until fragrant.

medium heatAdd the chicken with all its marinade, turn the heat to medium-high heat and stir for , until the pieces are white on the outside.
medium-high heatStir in the egusi paste and the rest of the stock. Simmer over medium-low heat for , stirring and scraping the bottom often because egusi sticks. Small soft curds form and the sauce turns creamy, like a korma. The chicken is done when the thickest piece is no longer pink inside (75 °C).

Cook's tip
For a milder curry, use half a green chilli instead of scotch bonnet and remove the seeds. If the sauce looks a little split, that is the egusi curds; stir in a spoonful of yogurt off the heat to smooth it. Chicken breast works too: shorten the simmering by about 5 minutes so it stays juicy.
Cooking it at camp
Marinate the chicken at home in a sealed bag and keep it in a well-iced cooler; toast the egusi at home too. At camp it is a one-pot dish on a burner, about 35 minutes. Keep the flame low while simmering and check the chicken is cooked through before serving.
