Overnight Rib-Stock Erwtensoep with Katenspek Rye
Browned pork ribs and smoked bacon build the stock, an overnight rest makes it deep and velvety, served the classic way with rye and smoked bacon.
Method
Heat the oil in a heavy 4 L pot over medium-high heat, add the ribs and bacon cubes and brown them for , turning, until deep golden on all sides. That browning is what gives the stock its depth.

Cool it quickly by standing the pot in cold water (within 2 hours), then cover and refrigerate for . Overnight, the flavours come together and the soup sets firm.

Add a splash of water and reheat slowly over low heat for , stirring constantly and scraping the bottom. It is ready when it steams and bubbles at the edges. Cook's tip
Thick soup scorches easily, so always reheat it slowly while stirring. Too thick: add water; too thin: simmer uncovered a little longer. If you can’t wait, you can eat it straight after step 4, but the overnight rest makes a real difference.
Cooking it at camp
Do everything up to the overnight rest at home and bring the soup in a cooler below 5 °C; at camp you only reheat it. Set a cast-iron pot at the edge of the embers, add a splash of water and keep stirring. Bring the rye and katenspek as they are and assemble on site.
