Cook's tip

The pickles taste even better made a day ahead and keep for about a week in the fridge. Banh mi is all about crisp bread, so warm it last and assemble immediately. If the patties crumble, add 1 tbsp flour to the mix.

Cooking it at camp

Fry the patties at home, cool them and bring them in the cooler; at the campsite, reheat them on both sides in a lightly oiled pan or on the grill, so there is no hot oil to handle. Crisp the baguettes briefly on the grill grate.
