About servingsRunny yolks are not recommended for young children, pregnant women or older people; flip the eggs and cook the yolks through. Fava beans can cause a serious reaction (favism) in people with G6PD deficiency.

Method

  1. Make the salsa: roughly seed the tomatoes and cut them into 5 mm dice, seed and devein the jalapeño and chop it finely (keep the seeds if you like it hot), and finely chop the red onion. Toss with the coriander, the juice of half the limes and the salt, and leave for 10 minutes so the flavours mingle. Don't rub your eyes after handling the jalapeño.

Add in this stepTomatoes (medium) 2Fresh jalapeños 1Red onion ¼Fresh coriander (cilantro), chopped 1½ tbspLimes ½Salt ¼ tsp

  2. Heat oil in a 20 cm pan on medium heat and cook the chopped onion for until soft and translucent. Add the minced garlic, cumin and smoked paprika and stir for 30 seconds until fragrant, then pour in the fava beans with their liquid. Lower to medium-low heat and cook for , mashing most of the beans with a spatula or potato masher. Add the rest of the lime juice and the salt and turn off the heat when it is thick like refried beans and a spatula drawn across leaves the base visible for a moment.

Add in this stepVegetable oil 1¼ tbspOnion ½Garlic cloves 2Ground cumin 1 tspSmoked paprika ½ tspCanned fava beans (ful), with their liquid 400 gLimes ½Salt 0.4 tsp

  4. Heat oil in a 24 cm non-stick pan on medium heat, crack in the eggs and sprinkle the whites with salt. Cook for , covering with a lid for the last minute so the white over the yolk sets too. The whites should be fully opaque and the yolks still wobbly.

Add in this stepVegetable oil 1¼ tbspEggs 4Salt ⅛ tsp

    medium heat
  5. Lay 2 tortillas side by side on each plate, spread thickly with the fava purée and top with the fried eggs. Spoon over plenty of salsa, crumble over the feta, add sliced avocado and the rest of the coriander, and serve at once.

Add in this stepFeta (or queso fresco) 40 gRipe avocados 1Fresh coriander (cilantro), chopped ½ tbsp

Cook's tip

Shallow-fry the tortillas briefly in oil for crunchier tostadas. Melted cheddar or Monterey Jack is a good swap for the feta. Leftover fava purée makes a great nacho dip.

Cooking it at camp

Make the salsa and fava purée at home and pack them in the cooler; at the campsite you only toast tortillas and fry eggs. Use one griddle or large pan: tortillas first, then the eggs.
